Hi Mike,
You can accomplish what you need to do quite easily- Threshold the
objects using Count/Size and use a new class for each color range you
are counting. When Ranges Statistics measures the percent area covered
by the objects it does so relative to the thresholded areas, not the
entire area (which would include your open spaces) of the image.
If the areas you are measuring surround the open spaces you mention,
make sure that the 'Fill Holes' option in
Measure|Count/Size|'Options...' is not checked.

I have a client doing research on Heart muscle, who wants to record
different % areas in the tissue (microscope slide-Masson's Trichrome).
Not a problem using IPP-count/size and segmentation! However, the
sections have empty spaces (microscope light transmitting through the
specimen) that is unwanted in the final total of 100%. Is there some way
of eliminating these spaces from the final Range Statistics?
Any help would be greatly appreciated.
