Dear William, some people use Congo red to stain starch - I think this
fluoresces green. For the lipid, You could use Nile red, or DiI or
some other lipid stains which fluoresce red. For protein, I was going
to suggest eosin, but that also fluoresces green - so what about
something like methylene blue which I think fluoresces in the far red?

Since all these, other than DiI are standard histological stains, you
should be able to buy them pretty cheaply to try them out. I have
never tried them together, but I thought the suggestions might help.

     Good luck

To all,

I am trying to triple label protein, fat, and starch in dairy products.
I have access to a BioRad MRC 1024 with a Krypton/Argon Laser. Does anyone
has ideas on the best ( or any) way to do this?
